· Rice 1 cup
· Cottage cheese cut in 2cm cubes - ¼ of a cup (fry them to golden brown)
· Peas ¼ cup
· Cashew nuts 6-7
· Almonds 6-7 (blanched and peeled)
· Green cardamom 4-5
· Cinnamon stick 2” long
· Cumin seed ½ tsp
· Bay leaves 2-3
· Salt to taste
· Oil 1 Tbsp
· Turmeric powder ¼ tsp
1.Clean and wash rice and keep aside.
2. In a pan, heat oil, add cumin seeds, cinnamon, green cardamom and bay leaves. Stir a little.
3. Add peas and nuts and stir fry a little, then add rice and stir for a few minutes.
4. Now add 2 cups of water, turmeric and cheese cubes.
6. Stir and let it boil on high heat .
5. When it starts boiling, simmer it on low heat for 20min or until the rice is done.
